Roasted pumpkin with feta PDO & maple syrup

Feta is a traditional and certified Greek cheese with high nutritional value and rich taste that goes well with almost all food products. It comes from sheep’s milk, or a mixture of sheep and up to 30% goat’s milk.
Look for the PDO sign (Protected Designation of Origin) which ensures the quality, the uniqueness and the authenticity of Feta.

Ingredients
• 1 medium sized pumpkin (approx. 1.5kg)
• 3 tbsp maple syrup
• 3 tbsp olive oil
• 2 tsp cumin
• Salt and Pepper
• 75g feta PDO cheese, crumbled
• 100g Baby rocket leaves, chopped
• 2 tbsp pepitas for serving

Instructions
Preheat the oven to 200°C. Line a baking tray with greaseproof paper and set aside. In a large bowl, mix the olive oil with the maple syrup, and the cumin and season with a pinch of salt and pepper. Dip each pumpkin wedge into the oil mix, coating it completely and place it on the baking tray. Repeat for all pieces. Pour remaining oil over the pumpkin pieces. Cook for around 20 minutes or until tender. Turn once during the cooking time for even caramelizing. Lay the pumpkin pieces (warm or cold) on a plate and sprinkle them with rocket, the crumbled feta, pepitas and an extra splash of olive oil. Enjoy your meal!
